I wouldn't use filler at all. Egglofting is generally not a drag-limited event. An authentic build would not show a high degree of finish.

I realize that the damaged egg capsule lower portion has a slight hyperbola to it, but rather than repairing it would it be possible to wrap it with a cardstock cone? It works great for the transitions of the Saturn kits.
I'm sure the math exists to draw the pattern.

After the first application and sanding, it's little 'coarse', leaving poc-marks, so I think for the second coat I'll thin it with water with the hope that it will dry and sand with a smoother finish. I think you meant "Hobbico" lite filler, not "Hobby Poxy" .
The "Hobby Poxy" product is a two-part epoxy based filler that has not been available in hobby stores for over 20 years. I have some that I use. Incidentally, the Hobby Poxy product is still available in marine stores under the "Pettit Paint" label.
