In my book, those built up fins are WAAAAYYY too much of a pain and effort for the result.
I would prefer any of the following over them in this order:
1)MACHINED to scale wood fins in balsa, basswood, or ply.
2)Basswood or ply fins in the balsa alternative fin profile.
3)the included balsa "alternative" fins

If I wanted to build something with that many pieces, I'd build another built-up rib R/C wing.

It gets easier when you've done it enough times. The hard part part is doing it enough times for it to get easier.

No way for me! I ain't sanding and filling ad nauseum on eight fins when I can build up some cardstock ones that are almost ready for primer.
