What do you think about using Coverite for fins?

If you are going to go that route, I would use Monokote or Ultrakote as they have a glossy/smooth texture. Coverite is fabric and still must be primed/painted to get a smooth surface.
If you are doing it for strength, then by all means use Coverite but I can't imagine needing that kind of addtional strength on ANYTHING LPR or MPR.

Thanks for the quick response. I am going to build an Estes Big Daddy and since I have to wait until Xmas to open it I am planning out how I am going to build it. I have read everything on EMRRs site and I am considering different ways to beef it up for larger engines. :)

I've used Monokote for HPR in the past, including my entire LOC Ultimate, and the main tubes of my King VIper III.
Makes for a nice smooth finish without a lot of work.
Trim Monokote also works great for decorating, or might be useful on smaller MPR birds without having to iron on the covering ,etc.
